Blueberry Pumpkin Pancake Recipe

1 cup all-purpose flour
1 Tbsp sugar
2 tsp baking powder
1 tsp ground cinnamon
1 cup fat-free skim milk
1/2 cup canned pumpkin
2 large eggs, separated
1/2 tsp salt

1 cup blueberries
2 Tbsp canola oil

Instructions  for Blueberry Pumpkin Pancake Recipe

Mix flour, sugar,baking powder, salt, and cinnamon. Beat egg whites until fluffy. Combine milk, yorks, oil and pumpkin. Add milk mixture to dry mixture stirring until flour is moistened. Fold in egg whites and blueberries. Use 1/3 cup for each pancake – 3 Weight Watchers PointsPlus for each pancake.
