Baked Puff Pancake Recipe
Sometime you don’t have a lot of time and you want to prepare a quick, easy and healthy breakfast. Here is one of my favorite breakfast recipes that I have shared many times. Unfortunately I have no picture, which is surprising because I always take pictures of my food. So next time I make it I will post a picture here.
- 2 tsp butter
- 1 cup Skim Milk
- 3/4 flour
- 2 eggs or 1/2 cup egg substitute
- 1 Tbsp canola oil
- 1/2 tsp cinnamon
- pinch of salt
- 1 1/2 cups of frozen fruit (I use blueberry/blackberry/raspberry)
- Greek Yogurt (I use blueberry)
1.) Preheat the oven to 450 degrees. Place butter in a 9-inch glass pie plate. Place in oven and heat until butter melts – about 2 – 3 minutes.
2.) Meanwhile combine milk, eggs, flour, eggs, oil, cinnamon and salt and beat until well mix and smooth. I use my Bullet to blend it quickly with an easy clean-up.
3. ) Remove the skillet from the oven and swirl the butter around so that the sides are well coated. Pour the mixture into the pie plate and add fruit. Bake for 25 minutes or until pancake is lightly browned and puffed. I serve mine with Greek Yogurt. You can also add maple syrup if you wish.
