Blueberry Cream Cheese Breakfast Cobbler

This delicious cobbler could also be served for dessert but it’s great for breakfast. This recipe can be prepared in a 9 x 13 inch glass baking dish or in individual baking dishes.

1/2 cup unsalted butter
2 lightly beaten eggs
1 1/2 cups milk
1 1/2 cups flour
3/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
3 cups frozen or fresh blueberries
4 ounces cubed cream cheese



Preheat oven to 350 degrees. Melt butter and pour into baking dishes and coat all sides with help butter by swirling it around (either 9 x 13 inch glass baking dish or 6 individual ramekins). In a small bowl mix (or a magic bullet) mix eggs, milk, flour, sugar, baking powder and salt. Mix well and pour into prepared dish or ramekins over the butter but do not stir.
Add blueberries in a single layer but do not stir. Sprinkle pieces of cream cheese over the top.
Bake 40 to 45 minutes for baking dish or 20 to 25 minues for the ramekins or until golden brown and toothpick comes out clean.
Enjoy with Canadian maple syrup and bacon or sausage.
