One of the benefits of staying at a bed and breakfast in Toronto (or anywhere else) is being able to experience new and exciting breakfast recipes. The best breakfast recipe is a combination of good food, good conversation and wonderful people. At the Boatel breakfast is an event every morning with food that stimulates the palate with color, taste and texture.
I am continually on the search for new and exciting breakfast recipes that delight our B & B guests. This Mojito Fruit Salad (hold the rum) is quick and easy to make and a definite 4-star winner with our guests.
This recipe is great for breakfast but also goes well with a chicken or pork dish. You can even add white rum to take and make it a really Mojito Salad.
Mojito Fruit Salad Recipe
Ingredients
Fresh fruit of your choice.
Chopped fresh mint (see tip below)
1 package of Stevia (zero calorie sweetener per for diabetics too)
1 large lime
Recipe Directions
- Clean and chop your selection of fruit. This morning I used watermelon, mango, grapes, plums and strawberries.
- Chop up fresh mint into salad bowl. I use a special set of Herb Scissors which you can find at any speciality kitchen store. They are safe to use and do a quick and easy job of cutting up herbs. They cost about $15-20 but they are a great timesaver.
- Sprinkle 1 package of Stevia over the salad. I like to use Stevia which is a natural sugar however you can substitute sugar if you wish. 1 package of Stevia equal 2 teaspoons of sugar.
- Grate the lime zest and then squeeze the juice from the lemon into the salad.
- Toss and enjoy.
